Whipped Goat Cheese with Honey and Pomegranates

Serves: ¾ cup whipped goat cheese
 
Ingredients
  • 5 ounces goat cheese, softened
  • 2 ounces cream cheese, softened
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper (or less if you don't like black pepper)
  • ¼ cup pomegranate arils, plus more for garnish
  • 1 baguette, cut into ½ inch crostini
  • 2 tablespoons olive oil
Instructions
  1. Preheat oven to 350 degrees.
  2. Brush crostini with olive oil. Season with salt and freshly cracked black pepper. Bake for 10 minutes or until slightly brown and crisp. Set aside.
  3. In the bottom of a stand mixer add goat cheese and cream cheese. Using the whisk attachment, whisk on high until light and fluffy, about 1-2 minutes.
  4. Add in honey, salt and black pepper. Whip another 30 seconds.
  5. If added pomegranates to the mixture, gently fold in.
  6. Transfer to serving container, sprinkle with pomegranate arils and drizzle with honey.
  7. Serve with crostini
