Peach, Blackberry and Blueberry Graham Cracker Crumble

Ingredients
  • 7 cups sliced peaches
  • 12 ounces blueberries
  • 6 ounces blackberries
  • ⅓ cup cornstarch
  • ⅔ cup white sugar
  • ⅓ cup brown sugar
  • ½ teaspoon salt
  • 2 tablespoons lemon juice
Crumble:
  • 1 cup graham cracker crumbs
  • 1 cup quick cooking oats
  • ⅓ cup brown sugar
  • ⅓ cup white sugar
  • ½ teaspoon salt
  • 1 stick unsalted butter cut into small cubes.
Instructions
  1. Preheat oven to 375 degrees.
  2. In a large bowl toss cornstarch, white sugar, brown sugar, salt and lemon juice together. Pour into a greased 10-inch cast iron skillet.
  3. In a medium bowl, combine graham cracker crumbs, oats, brown sugar, white sugar and salt. Using a fork or your fingers, blend in the butter until completely combined. The dough should be shaggy and damp. Sprinkle crumble all over fruit.
  4. Place the cast-iron skillet on top of a baking sheet and place in the oven.
  5. Bake until the topping is golden brown and the fruit it bubbling, about 45 minutes.
  6. Let rest for 15 minutes before serving with ice cream.
