Creamy buffalo chicken filling is wrapped in a tortilla and smothered with an easy hatch pepper queso. The perfect game day meal!
Ingredients
  • 2 hatch peppers
  • ½ Tlbs. butter
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 6 green onions, chopped
  • 6 cups shredded chicken
  • ½ cup buffalo sauce
  • 6 ounces cream cheese
  • 1 (8 oz.) can mild chopped green chiles
  • 4 large burrito tortilla
  • 12 oz. Velveeta queso blanco sliced cheese, cut into pieces
  • ¼ cup whole milk
Instructions
  1. Preheat oven to 350 degrees. Spray a baking sheet with non-stick cooking spray.
  2. Heat a large non-stick skillet to a medium heat. Add butter. When butter melts, add onions, garlic, and whites of green onion. Sauté until soft and translucent, about 2-3 minutes. Add greens of onion, chicken, buffalo sauce, cream cheese, and chopped green chiles. Stir until cheese is melted.
  3. Divide filling in between four tortillas, wrap up, burrito-style. Place on baking sheet. Bake until crisp and golden brown, about 10-15 minutes.
  4. While burritos cook, make sauce.
  5. Remove skin, seeds and membrane from peppers. Chop finely. Add peppers, cheese, and milk. Cook over a low heat, stirring occasionally until cheese is completely melted.
  6. Pour sauce over burritos.
