Butternut Squash Pizza with Brown Butter Base

Ingredients
  • ½ pound of pizza dough
  • 1 small butternut squash thinly sliced into discs (about two cups)
  • 3 tablespoons unsalted butter
  • ¼ onion, sliced
  • 1 cup low-fat mozzarella, shredded
  • ½ cup parmesan, grated
  • ½ cup ricotta
  • 10 sage leaves
  • Salt
Instructions
  1. Preheat oven to 550 degrees and place a pizza stone on the middle rack to heat while you prepare the pizza.
  2. Blanch butternut squash: fill a medium saucepan with water and bring to a boil. Cook squash in water for two minutes. Remove and cool off in a bowl of ice water. Drain and pat squash dry with a paper towel and set aside.
  3. Melt butter in a small sauté pan over a medium heat, swirl the pan until butter is a deep brown and smells nutty. Remove from heat, season with salt, and set aside.
  4. Roll dough into a circle and put on a pizza wheel coated with cornmeal to keep the dough from sticking.
  5. Spread the brown butter over the dough leaving a small edge. Place ¾ of sliced butternut squash on the pizza dough and season with salt. Cover with mozzarella, onion, and parmesan cheese. Place remaining squash over cheese. Dollop ricotta cheese and sage sporadically over the pizza. Season with a little salt and pepper.
  6. Slide pizza onto the stone and bake until brown and bubbly, about ten minutes.
