Blueberry Bran Muffins with Chia Seeds

Serves: 12 muffins
- 1 cup all-purpose flour
- ½ cup whole-wheat flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup canola oil
- ¼ cup sugar + 2 tablespoons
- 1 cup milk, divided
- 1 cup bran cereal
- 1 egg
- 1 tablespoon chia seeds
- 1 cup blueberries
- Preheat oven to 375 degrees.
- Soak cereal in half a cup of milk. Set aside.
- Whisk flours, chia seeds, baking powder and salt together in a bowl. Set aside.
- In another bowl, whisk together oil, sugar, egg, bran cereal soaked in milk and remaining milk.
- Add wet mixture to dry ingredients.
- Fold in blueberries.
- Fill the batter in a muffin pan with liners.
- Bake for 20-30 minutes until a wooden skewer comes out with a very few crumbs attached
