Chorizo and Poblano Queso Fundido

Ingredients
  • ¼ cup onion, chopped
  • ¼ cup poblano chile, chopped
  • 1 large garlic clove, chopped
  • Pinch of red pepper flake
  • ¼ teaspoons salt
  • ¼ cup tequila
  • 8.8 ounces Chihuahua cheese, cubed
  • 2 ½ ounces Mexican chorizo, cooked
Instructions
  1. Set your oven on broil.
  2. In a small saucepan, heat a little bit of olive oil over a medium heat. Cook onion, poblano and garlic until soft, about two to three minutes. Season with salt. Add tequila, reduce by half. Stir in cheese a quarter at a time, stirring until cheese is completely melted. Add in salt and chorizo.
  3. Transfer to an oven safe dish and broil until cheese is bubbly and starting to brown, about four to five minutes.
  4. Serve immediately with chips and crackers.
