This pineapple and ham farro fried "rice" is a super healthy alternative to the greasy take out fried rice that's seriously delicious!
Ingredients
8 ounces farro, cooked
3 teaspoons olive oil
½ medium onion, chopped
2 garlic cloves, minced
½ cup diced carrot
1 cup chopped ham
1 cup chopped pineapple
6 tablespoons soy sauce
1 teaspoon brown sugar
1 teaspoon sirracha
3 teaspoons sesame oil
2 teaspoons sweet chili sauce
4 teaspoons peanut butter
1 teaspoon rice vinegar
2 green onions, sliced thin.
Instructions
In a small bowl, whisk together soy sauce, brown sugar, sirracha, sesame oil, sweet chili sauce, peanut butter and rice vinegar.
Heat a large non-stick skillet over a high heat. Add oil. When oil is hot add, onion, garlic and carrots, stir-fry for 1-2 minutes (make sure to toss frequently so the veggies don’t burn). Add ham and pineapple, cook another 2 minutes until carrot and onion are slightly softened.
Add farro, cook two minutes, stirring frequently.
Pour sauce over farro, and continue to cook for 1-2 minutes.. Toss in sliced green onion.
