Pineapple and Ham Farro “Fried Rice”

This pineapple and ham farro fried "rice" is a super healthy alternative to the greasy take out fried rice that's seriously delicious!
Ingredients
  • 8 ounces farro, cooked
  • 3 teaspoons olive oil
  • ½ medium onion, chopped
  • 2 garlic cloves, minced
  • ½ cup diced carrot
  • 1 cup chopped ham
  • 1 cup chopped pineapple
  • 6 tablespoons soy sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon sirracha
  • 3 teaspoons sesame oil
  • 2 teaspoons sweet chili sauce
  • 4 teaspoons peanut butter
  • 1 teaspoon rice vinegar
  • 2 green onions, sliced thin.
Instructions
  1. In a small bowl, whisk together soy sauce, brown sugar, sirracha, sesame oil, sweet chili sauce, peanut butter and rice vinegar.
  2. Heat a large non-stick skillet over a high heat. Add oil. When oil is hot add, onion, garlic and carrots, stir-fry for 1-2 minutes (make sure to toss frequently so the veggies don’t burn). Add ham and pineapple, cook another 2 minutes until carrot and onion are slightly softened.
  3. Add farro, cook two minutes, stirring frequently.
  4. Pour sauce over farro, and continue to cook for 1-2 minutes.. Toss in sliced green onion.
