Shrimp "Cocktail" with Basil Dipping Sauce

Serves: 1 pound of shrimp
- 1 pound peeled and deveined shrimp
- 2 teaspoons olive oil
- ½ teaspoon salt
- Pepper
- Red Pepper Flakes
- ½ cup non-fat, plain Greek yogurt
- 1½ tablespoons mayo
- ½ teaspoon lemon zest
- 1½ teaspoons lemon juice
- 2 tablespoons chopped basil
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- Preheat oven to 375 degrees.
- Toss shrimp with olive, salt, pepper and red pepper flakes. Place on a rimmed baking sheet and baking until bright pink, about 10 minutes.
- In a small bowl, combine remaining ingredients.
- Serve shrimp hot or room temperature with dipping sauce.
