Chipotle Black Bean Sliders with Sweet Potato Fries and Lime Sour Cream

The meat-free black bean sliders are every bit and flavorful and hearty as a traditional burger.
Ingredients
  • 2 14 ounce cans black beans, rinsed and drained
  • 2 tablespoons + 2 teaspoons olive oil
  • 1½ cups chopped onion
  • 3 garlic cloves, minced
  • 1½ teaspoons cumin
  • ½ teaspoon salt
  • 2 chipotle peppers in adobo, finely chopped
  • 1 cup frozen corn, thawed
  • 2 ounces chopped pimentos
  • 1 green onion, chopped (plus more for garnish)
  • 1 egg
  • ¾ cup whole-wheat breadcrumbs
Yogurt
  • 1 cup plain greek yogurt
  • 1 teaspoon lime zest
  • 1½ tablespoons lime juice
  • 1 small garlic clove, grated
  • ¼ teaspoon salt
  • 1½ cups frozen sweet potato fries, cooking according to package directions
  • 8 slider buns
Instructions
  1. Add black beans to a large bowl. Using a fork, mash up about half of the beans. Set aside.
  2. In a small sauté pan, heat 2 teaspoons olive oil over a medium heat. Add onions and garlic. Saute until softened, about five minutes. Set aside.
  3. Add onion mixture, cumin, salt, peppers, corn, pimentos, green onion, egg and bread crumbs to beans. Mix to combine. If the mixture is too wet, add more breadcrumbs.
  4. Form into 8 slider patties.
  5. Heat a large non-stick skillet to a medium-high heat. Add olive oil. Cook patties until golden brown on both sides, about 3-4 minutes per side.

  1. Combine all ingredients
Assembly:
  1. Place patties on slide bun, top with lime greek yogurt and a handful of fries. Garnish with sliced green onion.
