White Chocolate Macadamia Nut Granola

This super easy granola tastes JUST like a white chocolate macadamia nut cookie.
Ingredients
  • 2 cups oats
  • 1 cup sliced almonds
  • ½ chopped macadamia nuts
  • ¾ cup sweetened coconut
  • ¼ cup honey
  • ⅛ cup packed dark brown sugar
  • 2 tablespoons coconut oil
  • ½ teaspoon salt
  • ½ cup white chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl mix together, oats, almonds and macadamia nuts and coconut.
  3. In a liquid measuring cup, mix together honey, brown sugar and coconut oil. Microwave in 15 second increments, until brown sugar and coconut oil have melted, stirring in between each increment.
  4. Toss liquid ingredients with oats, almonds and macadamia nuts until it's evenly coated. Toss with salt.
  5. Spread granola evenly on a rimmed baking sheet,
  6. Bake for 25-30 minutes, stirring every ten minutes to ensure the granola doesn't burn. When it's golden brown remove from oven. Let cool for five minutes.
  7. While the granola is still warm, sprinkle with white chocolate. Let sit for another five minutes, then toss until chocolate has covered most of the granola.
  8. Let cool completely.
  9. Store in airtight container.
