Cheesy Corn, Cheddar and Chipotle Dip

Ingredients
  • 2 ears of corn (about 2 cups)
  • 1 cup non-fat greek yogurt
  • 3 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 2 chipotle peppers, finely chopped
  • 2 green onions, chopped
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
Instructions
  1. Grill ears of corn until slightly charred. Cut from the cob and cool.
  2. In a medium bowl, combine remaining ingredients along with corn.
  3. Serve with ritz crackers.
