Cheesy Corn, Cheddar and Chipotle Dip

Serves: 3 cups
- 2 ears of corn (about 2 cups)
- 1 cup non-fat greek yogurt
- 3 ounces cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 2 chipotle peppers, finely chopped
- 2 green onions, chopped
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- Grill ears of corn until slightly charred. Cut from the cob and cool.
- In a medium bowl, combine remaining ingredients along with corn.
- Serve with ritz crackers.
