Creamy Lemon and Leftover Turkey Tagliatelle

  • Hemis Fare Tagliatelle
  • ½ cup heavy cream
  • 1 ½ teaspoons lemon zest
  • 2 tablespoons lemon juice
  • ½ teaspoons salt
  • ¼ cup parmesan cheese
  • ⅓ cup walnuts, roughly chopped
  • 1 ½ cup packed spinach
  • 1 cup diced leftover turkey (white meat)
  • Salt to taste
  1. Bring a large pot of water to a rolling boil. Season with salt and pepper. It should taste like the sea.
  2. Cook pasta until aldente. Reserve ½ cup of cooking liquid. Drain pasta and add back to pot.
  3. Turn the heat on low and add cream, cheese, walnuts, spinach, leftover turkey and salt. Toss until cheese has melted and spinach is wilted.
  4. Season to taste with salt and pepper.
