Orzo with Zucchini, Squash, and Fontina Cheese

  • 1 ¼ cup orzo
  • 1 tablespoon olive oil
  • 2 cups cubed zucchini
  • 2 cups cubed squash
  • ¼ small onion chopped
  • 1 garlic clove minced
  • 1 roma tomato chopped
  • 1 teaspoon tomato paste
  • ¼ cup white wine
  • ½ teaspoon salt
  • ½ cup parmesan cheese
  • 1 cup cubed fontina
  1. Cook orzo according to package directions
  2. Saute zucchini, squash, onion, garlic, and olive oil in a large sauté pan over a medium heat until softened about eight minutes.
  3. Add tomatoes, tomato paste, and salt. Cook another two minutes.
  4. Add wine; simmer until reduced, about two minutes. Reduce heat to low.
  5. Add orzo, parmesan, and fontina. Mix until combined. Keep over the heat until cheese begins to melt, one to two minutes. Serve.
