Blueberry Bran Muffins with Chia Seeds

Ingredients
  • 1 cup all-purpose flour
  • ½ cup whole-wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup canola oil
  • ¼ cup sugar + 2 tablespoons
  • 1 cup milk, divided
  • 1 cup bran cereal
  • 1 egg
  • 1 tablespoon chia seeds
  • 1 cup blueberries
Instructions
  1. Preheat oven to 375 degrees.
  2. Soak cereal in half a cup of milk. Set aside.
  3. Whisk flours, chia seeds, baking powder and salt together in a bowl. Set aside.
  4. In another bowl, whisk together oil, sugar, egg, bran cereal soaked in milk and remaining milk.
  5. Add wet mixture to dry ingredients.
  6. Fold in blueberries.
  7. Fill the batter in a muffin pan with liners.
  8. Bake for 20-30 minutes until a wooden skewer comes out with a very few crumbs attached
