Egg White & Avocado Breakfast Tostadas
Serves: 1
  • 2 eggs + ½ egg yolk
  • 1 corn tortilla
  • 3 slices avocado
  • 2 tablespoons salsa
  • Cilantro
  • Salt and pepper to taste
  • Olive oil cooking spray
  1. Spray a non-stick sauté pan with cooking spray.
  2. Scramble eggs over a medium low-heat until cooked, season with a little bit of salt and pepper. Remove from pan and set aside.
  3. Place tortilla in the pan over a medium-high heat and heat about 30 second per side.
  4. Top tortilla with eggs, salsa, and avocado.
  5. Garnish with cilantro and season to taste with salt and pepper.
