Caprese BLT Paninis

Ingredients
  • 12 slices bacon
  • 8 slices sourdough bread
  • 6 tablespoons mayo
  • 8 ounces fresh mozzarella cheese
  • 4 large tomatoes cut into ¼ inch slices
  • 1 bunch basil, about 16
  • salt and pepper to taste
Instructions
  1. In a cast iron skillet, cook bacon. Remove from skillet and drain on a paper towel. Leave bacon fat in pan.
  2. Assemble sandwiches. Slather each slice of bread evenly with mayo, about 1 ½ tablespoons per slice. On bottom slice of bread, layer tomatoes (season with salt and pepper), then basil, mozzarella (season with salt and pepper), followed by three slices of bacon. Top with remaining bread.
  3. In the same cast iron skillet you cooked the bacon, heat the fat over a medium-high heat. Place sandwich in skillet making sure to coat the whole piece of bread in grease. Take another heavy skillet or pot and place on top of sandwich to press, cook until golden brown, about three minutes. Flip and repeat. Serve immediately.
