Skinny Biscuits and Gravy with Whole-Wheat Sage Biscuits

Ingredients
Biscuits
  • 2 cups whole-wheat flour
  • 2 tablespoons chopped fresh sage
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 tablespoon cold butter cut into cubes
  • 2 tablespoon shortening
  • 1 cup cold buttermilk
  • 1 egg + 1 tablespoon water whisked together.
Gravy:
  • 8 ounces bulk turkey sausage
  • 2 teaspoon olive oil
  • ¼ cup whole-wheat flour
  • 2 ½ cups hot 1% milk
  • ¼ teaspoon black pepper
  • 1 teaspoon salt
Instructions
For the biscuits: Preheat oven to 425 degrees.
  1. In a medium bowl, whisk flour, sage, salt, baking powder and baking soda. Using a pastry blender or fork, cut butter and shortening into the flour mixture until it resembles coarse meal.
  2. Stir in buttermilk until just combined.
  3. Pour dough onto lightly floured surface, and knead slightly until the dough comes together.
  4. Using a rolling pin, roll dough out to a 1 inch thickness.
  5. Cut into biscuits using a 2 inch biscuit butter.
  6. Place on a baking sheet lines with parchment paper or silt pad. Brush with egg wash. Bake for 12-14 minutes until golden grown and cooked through.
For gravy:
  1. In a large sauté pan, brown turkey sausage in olive oil. Once sausage is brown, stir in flour. Cook one minute,
  2. Slowly whisk in hot milk. Add salt and black pepper. Bring to a boil and reduce to a simmer until thickened, about ten minutes.
  3. Season to taste with salt and pepper.
