Ingredients

  • 7 oz soba noodles
  • 1/4 cup + 1 tbsp tahini
  • 1 tbsp + 1 tsp sesame oil
  • 2 1/2 tbsp lemon juice
  • 1 garlic clove, minced
  • 1/4 cup + 1 tbsp water
  • 1/4 tsp salt
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 1/2 cups roughly chopped snow peas
  • 1 large red bell pepper, sliced thin
  • 1 large yellow bell pepper, sliced thin
  • 1 1/2 cups shredded carrots
  • 5 scallions, sliced
  • 2 tsp black sesame seeds

Instructions

  • Bring a large pot of water to a rolling boil. Season with salt. Add soba noodles and cook until aldente. Drain and run under cool water to chill to room temperature. 
  • In a medium bowl, whisk together, tahini, sesame oil, lemon juice, grated garlic, water, salt, soy sauce and honey. 
  • Add peppers and carrots to the cooled noodles. Toss. Add dressing. Toss until combined. Add scallions and sesame seeds, toss one more time. Serve at room temperature or store and serve cold.
