One of our favorite easy dinners as of late are these super flavorful Chicken Peanut Burgers. With peanut sauce in the chicken patties themselves and in the crunchy slaw, they're definitely for peanut sauce lovers. The chicken breast burgers are finished off with gooey Monterrey jack cheese, plenty of chopped peanuts, and served on a toasted whole-wheat bun.
2 1/2cupspackaged slaw mix (cabbage, carrrots and red cabbage)
2tbspchopped peanuts
8ozmonterrey jack, mozzarella, or pepperjack cheese
4whole-wheat buns, toasted
Instructions
In a large bowl, combine ground chicken, grated onion and garlic, 1 teaspoon salt, 2 tablespoons peanut sauce, and 1 tablespoon of chopped cilantro. Use hands to form four burger patties.
Heat a large non-stick grilled or pan to a medium heat. Add olive oil and coat the bottom of the griddle or skillet. Once the oil is hot, add the patties. Cook until brown, crisp,and cooked through, about 6-7 minutes per side.
When the burgers are about 1-2 minutes shy of cooked through, pile the cheese on top of the patties. Add two tablespoons of water and cover with a lid or if you're using a griddle, cover another large skillet (upsidedown) so you can steam the burgers and melt the cheese.
While the patties cook, add the slaw to a medium bowl. Stir with the remaining 1/4 cup of peanut sauce, 1/4 teaspoon salt, and 2 tablespoons cilantro. Toss to combine. Season with to taste salt and pepper.
To assemble: Put the patty on the bottom bun, top with slaw. Sprinkle with peanuts. Cover with top bun, serve.
