Coconut Curry Kale Salad with Naan Croutons: Sweet, spicy and full of flavor!
Servings 4 people
- 2 cups garlic Naan bread Trader Joe's frozen is the best!
- 1/2 tsp kosher salt
- 2 tsp olive oil
- 1 tbsp lemon juice
- 3 tsp agave or honey
- 2 tsp curry powder
- 3 tbsp coconut oil
- 1 tbsp olive oil
- 1/4 cup unsweetened coconut
- 1/2 cup roasted cashews (spicy cashews would be good as well!)
- 1/2 cup golden raisins
- 6 cups chopped kale (massaged prior)
Preheat oven to 350 degrees. Toss Naan with 2 teaspoons olive oil. Sprinkle with salt. Toss again. Spread on a baking sheet and bake until golden brown and crisp, about 10 minutes.
While the croutons cook, whisk the lemon juice, agave and curry powder together. Whisk in olive oil, then whisk in coconut oil. Season to taste with salt and pepper.
Toss kale with dressing. Season to taste with salt and pepper. Toss with coconut, cashews, raisins and cooled croutons.
