Cheesecake Stuffed Strawberries

It's like a salad but in bite-sized form! These stuffed strawberries are topped with a whipped goat cheese studded with honey, basil, maldon salt and black pepper. The perfect summer starter.

Ingredients

  • 15 strawberries
  • 5 oz honey goat cheese
  • 2 tsp finely chopped basil, plus more for garnish
  • 1 tsp thyme leaves
  • 1/4 tsp kosher salt
  • 1-2 tsp milk
  • freshly cracked black pepper for garnish
  • flaked maldon sea salt for garnish

Instructions

  • Cut the tops off of each strawberry. Cut each strawberry in half lengthwise. Use a small pairing knife to cut out the core of the strawberry.
  • Add the goat cheese, thyme, basil, salt and milk to the bottom of a mini food processor. Blend until smooth. Season with salt and pepper.
  • Add the mixture to a pastry bag fit with a pastry tip or a zip lock baggie. Cut the tip off. Pipe about 1/2 teaspoon of the mixture into the crevice of each strawberry stem. Sprinkle the top with extra chopped basil, flaked maldon salt and black pepper. Serve right away or chill and serve cold.
