This Easy Fried Rice with Egg is SO good, and will quickly become your go-to recipe for fried rice! This simple version is packed with garlic, carrots, peas, and plenty of scrambled eggs.
Add rice, water, salt, and butter to a rice maker. Follow instructions on rice maker. When rice is done cooking, spread on a baking sheet and place in the fridge until cold. Alternatively, you can use day old cold cooked rice.
Heat a large griddle, wok or skillet to a high heat. Add 2 teaspoons canola oil and spread on griddle. Add onion and white parts of the scallion. Reserve green tops for the end. Fry until slightly, softened, about 1-2 minutes. Add the garlic and saute for 30 seconds. Season with salt and pepper.
Add remaining canola oil and sesame oil to the griddle and when the oil is hot, add rice. Working quickly, use a metal spatula to fry the rice in the oil, stirring frequently. Fry until the rice is starting to get slightly crisp on the edges, about 3-4 minutes. Drizzle soy sauce over the rice, along with garlic powder, peas and carrots. Toss rice until soy sauce has been evenly distributed.
Make a well in the center of the rice and add eggs. Use a wooden spoon to scramble. When they're cooked, toss with the rice. Add the remaining scallions and butter to the rice. Toss and season with salt and pepper.
