Preheat oven to 425 degrees.Lightly grease a large baking sheet with non-stick cooking spray or cover with parchment.
Whisk flour, baking power and salt together in large bowl. Add in 1 cup shredded cheese and mix until combined.
If you haven't already, take the butter out of the freeze and use a handheld grate to grate the butter into the flour and cheese mixture. Quickly mix in frozen butter.
Drizzle milk on top and mix just until combined, it’s ok if doesn’t come completely together.Dump mixture out onto a lightly floured board. Knead once or twice until the dough comes together. Using hands, quickly press dough into a rectangle, ½ inch thick.
Use a 2-inch biscuit cutter to make biscuits. Dust a little flour on the biscuit cutter and press down firmly and quickly on the dough to make the biscuits - do not twist. Use scraps to make more biscuits until there is no dough remaining.
Use a pastry brush to brush milk on top of biscuits and then sprinkle evenly with remaining 1/2 cup cheese. Bake until golden brown and cooked through, about 15-18 minutes. Serve warm or room temperature.
