Our current favorite was to do meatballs: Asian Chicken Meatballs with Saucy Sesame and Hoisin Orzo. This fun spin on a classic pairs tender, garlic and ginger BAKED meatballs with an orzo full of veggies and an addictive sauce you'll want to lick with the a spoon. Prep ahead and eat later in the week!

Swimming in a luscious lemon-infused wine sauce and studded with briny artichokes and sweet caramelized onions, our Chicken with Artichokes is the perfect bright springy dish to whip up when we also need a little cozy for those curve ball cold days we all get this time of year.

Packed with a homemade cajun seasoning, sweet onion, and seared until blackened and crisp on the edges and irresistibly juicy and moist on the inside, our Cajun Chicken Burgers are our new favorite way to do a burger. We smother the spicy patties with melty pepper jack cheese, cover them with an easy mango salsa and top with a sweet Hawaiian roll.

Let's all satisfy the kid in us with these ultra crispy, completely irresistible Baked Coconut Chicken Tenders. We coat tender chicken in a light coconut and panko breading, bake them on a screaming hot baking sheet and then serve them with a quick warm mango salsa and a hot honey drizzle.

Chicken enchilada on the inside, taco on the outside is what makes our Chicken Enchilada Taco Quesadillas the perfect handheld hybrid of three classic tex-mex dishes. Each whole-wheat tortilla is filled with saucy shredded chicken (made with our epic homemade enchilada sauce) and cheese, pan-fried and then smothered with all your favorite taco fixings!

Twirly noodles tossed in a five-minute kale pesto, tender chicken meatballs, and plenty of nutty parmesan are the makings of our new favorite throw-it-together weeknight meal – Kale Pesto Pasta. Just because it's winter, doesn't mean we have to leave homemade pesto behind. Swapping out hearty wintery kale for a portion of the pesto brings a little seasonal aspect to our pesto and using crunchy almonds instead of pine nuts make this easy meal pocket-friendly as well.

Our Chicken Cannelloni may be a labor of love, but rest assured, this is one great love story. We stuff homemade pasta sheets with a creamy ricotta, shredded chicken, and spinach, cover in our favorite marinara sauce, and gooey fresh mozzarella cheese and then bake until bubbly and you can no longer handle the smells permeating throughout your house.
