Buttery pistachio and mint pesto, creamy goat cheese and paper-thin shaved carrots are the makings of our new favorite way to do summer veggies - a Raw Carrot Salad. We are simply obsessed with this crunchy, herbaceous, tangy totally delightful side dish.

If you pick one salad to make on repeat this fall, let it be our Roasted Butternut Squash Salad. This fall-forward salad is packed with roasted butternut squash and beets, speckled with creamy goat cheese, crunchy pepita seeds and hand-torn pieces of salty prosciutto. We toss everything in a sweet and savory pumpkin vinaigrette and dig in.

Visually beautiful and even tastier to eat, our Whole Roasted Cauliflower is THE vegetable recipe worthy of a permanent place in your dinner rotation. We steam a whole head of cauliflower, rub with with spices and then roast until it's tender on the inside and ultra crispy on top.  We cover it in an easy Calabrian Chili Chimichurri, sprinkle with toasted pine nuts, and finish it off with salty feta cheese. Eat a whole one for a meal or share with others as a side dish.

Crispy Baked Lemon Chickpea Cakes

Crispy on the edges, soft on the inside, and dusted with the perfect amount of seasoning, our Air Fryer Brussels Sprouts are the perfect quick and easy veggies to make any night of the week. Once the Brussels sprouts are done in the air fryer we toss them in a sticky homemade honey soy glaze, sprinkle with sesame seeds and then serve with extra sauce for dipping. (You'll want to dip.)
