Goat Cheese Strawberry Bites
I can’t think of a better combination than strawberries and goat cheese but when you put them in one whimsical little package the delicious calibrator is taken up a notch. It’s simple. We take softened honey goat cheese, whip it with a little cream or milk, fresh basil, thyme, salt and extra honey if desired. Pipe on to sliced fresh strawberries, give it a little garnish and dig in!
Perfect for a picnic, party or high tea, these cuties can’t be beat.

Ingredients in our Strawberry Bites
Strawberries: You don’t want to get strawberries that are too large. Try and eye berries that are small enough to pop in your mouth like a grape.
Goat cheese. To make things easier I go ahead and get honey goat cheese. If you happen to have plain or herbed, they will both work as well. Just be sure to add extra honey if so.
Herbs. I love a mix of basil and thyme but use any fresh herbs you’d like.
Milk or cream. To make sure the filling pipes nicely on to the strawberry I like to thin it out with a little milk or cream.
Salt. A fresh sprinkling and addition of flaked sea salt is a must.

Let’s make Goat Cheese Strawberry Bites.
Prep strawberries. Cut the tops off of each strawberry. Cut each strawberry in half lengthwise. Use a small pairing knife to cut out the core of the strawberry.
Make the filling. Add the goat cheese, thyme, basil, salt and milk to the bottom of a mini food processor. Blend until smooth. Season with salt and pepper.
Pipe! Add the mixture to a pastry bag fit with a pastry tip or a zip lock baggie. Cut the tip off. Pipe about 1/2 teaspoon of the mixture into the crevice of each strawberry stem. Sprinkle the top with extra chopped basil, flaked maldon salt and black pepper. Serve right away or chill and serve cold.

Can I make Strawberry Bites ahead of time?
Yes! I made these strawberry bites the morning of and served them later. I’ve also made them the day before, stored in an airtight container and they were good to go. If you’re worried about the strawberries wilting, you can alway prep them ahead of time along with the filling and then assemble right before serving.

Substitutions
- Swap out goat cheese for cream cheese or mascarpone
- Add in any favorite herbs
- Drizzle with balsamic glaze or hot honey for a sweet or spicy touch.

Tips and Tricks for Success
- make sure your filling ingredients are at room temperature. They will not blend properly if they aren’t.
- Use bite-sized strawberries.
- If your strawberries are not ripe, sprinkle them with sugar 10 minutes before assembling to release some of the juice and make them sweeter.
- If you are using a small piping tip, make sure you finely chop the herbs otherwise they will get stuck in the tip!

- 2 tsp finely chopped basil, plus more for garnish
- 1 tsp thyme leaves
- 1/4 tsp kosher salt
- 1-2 tsp milk
- freshly cracked black pepper for garnish
- flaked maldon sea salt for garnish
