Dark Chocolate Chunk Coconut Key Lime Pound Cake

I’ve really started to look forward to these posts, not only is it a great chance to test out some of the amazing recipes I’ve been itching to try from my favorite blogs, but I also get to take my thinking cap off for a minute and just follow someone else’s recipe – it’s kind of nice for a change. This is my third installment (but not the third recipe I’ve made so far) and there has not been one single recipe that hasn’t turned out seriously delicious, including today’s Dark Chocolate Chunk Coconut Key LIme Pound Cake from Ashley’s blog Baker by Nature.

For those of you that haven’t been to Ashley’s blog before, please check it out! She is a seriously talented blogger, most of her recipes are baked goodies, but she also throws in some savory dinners and snacks in the mix as well. Everything she posts seriously makes mouth water, and her photography is gorgeous. Her Meyer Lemon Poppyseed Pancakes she posted the other day, just about gave me a heart attack. Wowza.

This is not your average quick bread or pound cake, which was what initially drew me to it in the first place. The flavors together are just so interesting – in a good way.

Lime – in the form of zest that permeates the entire bread without being overly citrus-y or intense.

Dark Chocolate – lots and lots of luscious dark chocolate.

Coconut – in the form of coconut oil. This was the first time I’ve used coconut oil, and I have to say, I’m smitten. I’m definitely going to try and incorporate it into more of my baking. It adds a subtle hint of coconut, and almost tropical flavor to the bread that I just love.

Aside from the flavors, what I also really love about this bread is it’s actually a little bit healthier for you than a typical quick bread. The addition of coconut oil and greek yogurt lighten the whole cake up, but still give it an utterly luxurious feel.

I’ve been snacking on it all week, but I especially love to have a big slice in the morning, warm, slathered in butter, accompanied by a giant cup of coffee.

    I love making other bloggers’ recipes too..makes cooking super easy, and I can just drink my wine and relax! 😉 I try to make 2-3 dinners a week from blogs, great way to try others recipes too!
    This sounds fantastic…for some reason in my head pound cake to me is like eating banana bread for breakfast! ha..so cake for breakfast, totally justifiable! Love these flavors!

    Love the combination of flavors in this cake! The dusting of lime zest looks so pretty. Coconut oil is fabulous isn’t it? I’m going to have to start using it more.

    This is such a fun series Nicole! Your bread looks just as fabulous as when I saw it on Ashley’s site. Need to make it! Can’ t wait for next week’s post!

    And I totally agree with you–sometimes its nice to just sit back and just follow another person’s lead in the kitchen 🙂
