Grilled Honey Mustard Chicken Tenders

I have a food blog. Obviously. Because I’m a food blogger, it’s a pretty rare occurrence for me to make the same thing twice in one year, let alone in one month, so the fact that I’ve made these super easy Honey Mustard Chicken Tenders, not once, not twice, but THREE times in the last month speaks volumes to their tastiness.

They’re simple. They’re healthy. They’re the perfect weeknight dinner. They’re the perfect weekend dinner. They’re perfect for entertaining. They’re perfect for kids.

They’re just plain perfect.

I’ll keep the rest short and sweet, because today has been quite the day, and I’m ready to pop on some Bravo, pour myself a glass of Sonoma wine, and relax..

Grilled Honey Mustard Chicken Tenders

I get bored with chicken easily, so if I’m going to have it, it has to be interesting, it has to have a ton of flavor, and it has to be relatively easy to throw together. This, is all of those things. Equal parts of whole-grain Dijon mustard, lemon juice, and honey are whisked together with a little bit of fresh garlic, olive oil, and salt for a super simple marinade. Three-quarters of the mixture gets dumped into a big ziplock bag, the chicken goes in, and it marinates for the better part of a day.

When you’re ready to eat, you throw the chicken on the grill, baste it a few times with the leftover marinade, and take it off when it’s charred, and cooked through. I serve it with a quick orzo salad made with red peppers, fresh basil, red wine vinegar, Dijon mustard, and a little bit of salt, but these roasted potatoes, these green beans, or this cucumber and chickpea salad would also be the perfect side.

Serves: Seres 4
Ingredients
  • ¼ cup lemon juice
  • ¼ cup whole-grain Dijon mustard
  • 1 tsp. Dijon mustard
  • ¼ cup honey
  • 2 large garlic cloves, grated
  • ¼ tsp. salt.
  • 1 Tlbs. Olive oil
  • 2 lbs. chicken tenders
Instructions
  1. In a small bowl, whisk lemon juice, whole-grain mustard, Dijon mustard, honey, garlic, salt, and olive oil.
  2. Add chicken tenders to a ziplock bag. Pour ¾ of marinade on top. Seal and put bag in a bowl. Marinate for a least four hours and up to 8 hours.
  3. Preheat the grill to medium-high. Grill chicken until charred on both sides, about 3-4 minutes per side.

    That is certainly the true testament to a recipe, when a food blogger makes it multiple times in one month! You can’t beat how simple it is too. Spending less time in the kitchen and more time watching Bravo and drinking wine is always a plus in my book! 😉

    Planning a beautiful sandwich filled with these tenders for James who is breezing through tomorrow at lunchtime on his way to Charlottesville for a wedding, he will definitely enjoy. Some straight off the grill for Pat and Mimi for a much better than usual lunch.

      Absolutely! I would roast them at 375 on a baking sheet lined with a silpat, the honey has a tendency to stick and burn, so just watch it!
