Skinny Buffalo Turkey Sliders

The turkey has been cut, the presents have been opened and you’ve consumed every indulgent food known to man during the last three months. Now’s the time to reevaluate your eating habits and to start paying attention to things like calories and fat, right?

The only problem? We’re still in the midst of winter so we (or is it just me?) still gravitate toward comfort foods that can really start to pack on the winter pounds. Things like mac and cheese…like towering lasagnas…spaghetti with giant meatballs…creamy casseroles….

…you get the picture.

My solution?? Turn all the calorie-laden comfort foods into something you can feel good about eating.

I actually relish in finding ways to turn some of my favorite not-so-healthy dishes into more figure-friendly options, and I especially love the challenge of fooling my husband into thinking he’s indulging in one of his favorite foods, but it’s secretly healthy.

Just like the majority of the world today, he happens to be completely obsessed with anything buffalo sauce-flavored, even though most versions of buffalo dishes are chock-full of cream cheese, heavy cheeses or deep-fried into oblivion. Any time we have people over, or when I’m asked to take a dish over to a friend’s house, he requests something buffalo, so I thought it would be the perfect opportunity to try to take his favorite food and morph it into something much healthier.

Turkey burgers are one of my favorite ways to cut fat and calories, and here, I used Simple Truth® Ground Turkey Breast, which is super low in fat and calories. I laced it with plenty of diced carrot, celery, onion, garlic and – of course – plenty of buffalo sauce. The mixture is formed into patties and then grilled – if you really like spice, you can slather them with a little more buffalo sauce after they’ve finished cooking.

While the sliders grill up, I throw together a quick low-fat slaw with shredded carrots, red cabbage, low-fat mayo, buttermilk and just enough blue cheese to add that hint of tanginess but not a lot of extra added fat.

The patties are nestled onto slider buns (whole-wheat is great) and covered in the blue cheese slaw, and then they’re ready to be inhaled.

Ingredients
  • 1 pound ground turkey breast
  • ¼ cup diced carrot
  • ¼ cup diced celery
  • ½ cup diced onion
  • 1 large clove garlic, grated
  • 1 tsp. salt
  • ¼ cup buffalo sauce, plus more for after cooking
  • 2 green onions, sliced and divided
  • 2 Tbsp. low-fat mayo
  • 5 Tbsp. buttermilk
  • ¼ tsp. salt
  • 2 heaping Tbsp. crumbled blue cheese
  • ¾ cup shredded carrot
  • ¾ cup shredded red cabbage
  • 6 slider buns
Instructions
  1. Combine the turkey breast, carrot, celery, onion, garlic, salt, buffalo sauce and 1 green onion in a medium bowl. Form into six patties.
  2. Heat a grill pan or nonstick skillet to medium-high heat. Add the sliders and cook until they're golden brown on both sides and cooked through, about 2-3 minutes per side.
  3. While the patties are cooking, whisk the mayo, buttermilk, salt and crumbled blue cheese together in a small bowl. Add remaining green onion, shredded carrot and red cabbage. Toss in the dressing and season with salt and pepper.
  4. When the patties are finished cooking, brush with a little bit more hot sauce. Place the patties on slider buns, top with slaw and serve.
